One from my childhood ......

This is one my mum used to make and I still love it ......
A great way to use up eggs in an easy but tasty way :grin:

Its soooooooooooo easy to make....
Just use the amounts you would do for the amount of people eating it

what you will need:
2 eggs per person
a pile of mash potato
any left overs in your fridge that need eating up like:
Peppers,
Peas,
fine diced carrots,
shredded cabbage or sprouts
Onions,
Ham,
Bacon,
Sausage,
Basically anything you want to use up that can be 2nd cooked
Salt and Pepper to taste, or maybe curry powder (or chilli if you like spice)
cheese (to sprinkle on the top)

What to do......
preheat the oven to a medium heat ....

in a frying pan pop in all your ingredients (chopped up) BUT NOT THE cheese and mash
cook in a little olive oil till brown and tasty looking,
Then.....
mix it into the mash and put in a large shallow pyrex dish

make a hollow in the mash for each couple of eggs, then carefuly break the eggs into them.
with a scewer just prick the yolk (helps prevent exploding!!!)
then sprinkle with cheese
put into the oven until the eggs are cooked to your liking (or grill on a low heat if wanted)

then slop out and enjoy

this is YUMMY =D>
