My OH has actually banned me from making this, cos we eat the entire tin in one go and he says it's my fault that we both getting, well, porky Rolling Eyes Very Happy

The recipe belongs to a friend of mine, I can't claim credit for it. It is absolutely just the yummiest thing ever Very Happy

Millionaire's Shortbread

Shortbread base -
4oz butter
2oz caster sugar
6oz self-raising flour, sifted


Caramel filling -
4oz butter
4oz sugar
2tbsp golden syrup
405g can condensed milk


Topping -
8 oz chocolate, melted


Preheat the oven to 180C/350F/gas 4

Grease an 18cmx28cm /7"x11" tin or, line it with foil



For the shortbread base - cream together the butter and sugar until light and fluffy. Mix in the flour and press the mix evenly all over the base of the tin and bake for 15/20mins till golden.

Put all the caramel ingredients into a saucepan. Place over a low heat until dissolved, then bring to the boil, and boil for 6/7 mins, stirring continuously. Spread the caramel over the cooked base and allow to cool.

Pour the melted chocolate over it and allow to set. Cut into squares and store in an airtight container...if it lasts that long!!!! Very Happy

I can feel the calories going on the hips just reading the recipe Laughing

But then again I am going over to Mum's for the day on Friday, and I need something yummy to take with me... Rolling Eyes It would be rude not to give it a go... Wink
