This is the recipe for Madeira cake from my show schedule. We all lined our cakes up on paper doilies and it was amazing to see the difference altho they were all made from the same recipe.
6oz margarine or butter
6oz caster sugar
3 eggs
2 level teaspoons baking powder
8oz plain flour
1 teaspoon grated lemon rind
Cream margarine or butter with sugar until soft and creamy. Sieve flour and baking powder together, beat eggs. Add eggs and flour alternately to fat and sugar with lemon rind and enough milk to make a soft consistency. Put into a greased and floured 7" tin, sprinkle a little sugar on top and bake for 1 1/2 to 1 2/3 hours in a very moderate oven. about 350F gas mark 3 |

Must have been the home grown eggs that made yours stand out
