Crumpets or pikelets.
1 lb strong white flour
1 teaspoon salt
2 Tbsp. olive oil
1 sachet easyblend yeast
1 pint of milk and water mixed.

For the second mixing
half a tspn. bicarb of soda
5 fld oz. lukewarm water.

Put all dry ing.from the 1st mixing into large bowl mix, add wet ing. and beat vigorously until the batter is of a smooth consistancy. Cover with a tea towel and leave to rise , at least an hour.

2nd. mixing, mix the bicarb. to the lukewarm water and add to batter, stir thoroughly.

Lightly oil a frying pan over medium heat, now you can free form, Pikelets ,that is about three drops in the pan,they will spread a little. As soon as you see the top setting a number of tiny holes start to appear ,then they can be turned over and brown the other side.
If you want crumpets , oil crumpet rings and place in pan ,fill to almost the top and cook gently for around 10 mins then they should have the holes appearing , turn and cook the other side . Serve straight away . They do freeze very well.
Don't make too many, they are addictive
