Try these, for us more gluttonous folk:oops: the recipe only makes 9 so you can feel virtuous or double the quantities.
2oz butter softened
2oz sugar (you can use golden caster or soft brown)
1/2 tblsp golden syrup or runny honey (tricky to measure - a small blob will do)
3 oz self raising flour
half tsp bicarb
beat together butter, sugar and syrup/honey
sieve flour and bicarb into mixture. Mix only until all a uniform colour.
Place walnut sized pieces well spaced on a greased baking tray. Grease the bottom of a smooth bottomed glass (no silly comments now!) and press it into some of the sugar used. Use sugary glass to press the blobs until they are flat. You will need to re- sugar frequently or it will stick.
Bake in a moderate oven for 10 - 12 minutes. Check after 8 if it's on the hot side.
Leave biscuits on tray to firm up for about 4 minutes then remove to rack. Testing is allowed at this point!
These are really quick to make and make an excellent last minute gift - if you can keep off them yourself!
Incidentally, the original recipe added chocolate chips and dried cranberries. Bit ott for me, but feel free. |
