This is Mary Berry's Canterbury Tart. Not only is it REALLY scrummy but it uses 5 eggs.

Pastry.
4oz chilled butter cubed
8oz plain flour
1oz icing sugar
1 egg, beaten

Rub butter into flour & sugar, mix in egg. Or mix in processor.
Line 10-11inch flan tin, chill.

Filling
4 eggs
8oz caster sugar
Grated rind & juice 2 lemons
4oz melted butter
4 cooking apples, peeled
2 dessert apples peeled, thinly sliced.[I use cooking apples]
1oz demerara sugar.

Beat eggs, caster sugar, lemon rind and juice together, add melted butter. Grate the 4 cooking apples into mixture and spread into pastry lined tin. Place the thinly sliced apples around the outside edge and sprinkle with demerara sugar.
Bake 45-55 mins gas6 200c or there abouts



I make the same amount of pastry but tart above is only 3/4 of the filling, using 1 lemon as it fits my tin better.

Forgot to say, it freezes really well whole or cut into slices. Serve warm with cream or cold with ice cream or our favourite lemon sorbet Very Happy

2 duck eggs
one of the hens lays everyday in the goat pen and if I'm not there as she's laying they stand on it Rolling Eyes
