This is my favourite way to do a multi bird roast and its really easy. No plucking, gutting or boning and I think the end result is better as I'm not keen on game bird legs. We had this today, cold for lunch and it was scrummy, but its just as good hot.
Just out of the oven
Cold today
Birds used, 2 Muscovey breasts , cut through but not quite and opened out, on the top and bottom, then from the bottom up, stuffing, 4 call duck breast, stuffing, 4 bantam breasts, stuffing, 4 pigeon breasts, stuffing, then the other muscovey breast. Whole lot wraped in bacon. It weighed four and a half pounds and I roasted it for 1 hr 45mins at 175 |

Jan!! That's cruel Now you tell me there's an easy way after I've braved 2 days round the shops getting everything I wanted (except a meat thermometer ) and have all the knives sharpened ready for some boning and skinning and stuffing (and drinking?) and boning and stuffing (with maybe a break for sticking plasters on my fingers) then more boning and skinning and stuffing and sewing and tieing and cursing and drinking and plastering with duck fat and bacon and drinking and maybe thinking it wasn't such a good idea after all! Well... that's tomorrow sorted then

| Jan - only the three birds to do here. Guinea fowl first, then duck, then turkey outside (does that make it a Guinea Duckey?!) Going to skin the inside ones and stick everything inside together with sausagemeat stuffing. There's always so much fat on the duck that I thought I could use that to keep the finished beastie from drying out (although there is also some streaky bacon in the fridge too, incase I feel inclined...) |
