Anyone know the best way to preserve duck fat.
I have about 1 1/2pts of lovely clean, clear duck fat and want to save some of it. I've seen little jars of goose fat in the supermarkets for loads of money so do you think putting some in jars would stop it going rancid.
Perhaps it keeps just in the fridge, it is only the fat, it doesn't have any jelly at the bottom.

| if its pure fat a jar full with quater teaspoon of alchol on top will keep in a cupboard for ages ...........i personally put it in half pound jars filled to the top and put in veg bit in fridge will keep super.............and that doesnt fill a jar just use within a fortnite.............dont forget to cook baked pots but for food for the gods ............roast parsnips and carrots in it..................mojo |

Thanks mojo, and I agree its wonderful stuff. This amount came from 4 ducks when we gutted them. I rendered it down in a slow oven, then strained through muslin and its crystal clear
I could possibly use this amount now and over Christmas but have another 11 ducks to go.
Should be a enough for a years supply of roasted veg well perhaps 6 months  |

| i think that freezing it afects the flavour but thats only my opinion all the rest cant tell the differance .........rub a little layer over bread then dry toast in slow oven for croutons |

Issy, just out of interest, do you freeze it as lumpy fat or rendered down. If rendered, does it have to be used quickly after thawing ? |

I just scrape it off the top of the jelly and freeze it. Sorry Mojo but I can't taste the difference on roasties but now I will have to break my diet and try it on bread and it will be all your fault when I gain - not loose weight this week  |
