Had this tonight & it's delish!
Filling:
300g rhubarb, chopped into 1" pieces
150g sugar
4 tbsp cornflour
1/2 tsp salt
Topping:
225g cream cheese
75g sugar
1 large egg
1 unbaked pastry pie shell (or make your own if you're clever!)
Method:
Put chopped rhubarb in a saucepan with the sugar, cornflour,salt & a tbsp water. Cook over low heat until thick. Pour into the unbaked pie shell. Bake at 425*F/220*C/Gas Mark 7 for 10 minutes.
Mix the cream cheese, egg & sugar until creamy. Pour on top of the rhubarb. The filling will puff up, so don't fill right to the top of the pastry shell.
Bake at 350*F/170*C/Gas Mark 4 for 30 minutes or until the centre is set.
Serves 8
The recipe doesn't say which sugar to use, so I used Muscovado sugar in with the rhubarb, but ordinary caster sugar in the egg & cheese mix.
Even my boys loved this & had seconds too!  |

Hmmm.... sounds yummy!
Cream cheese added to the shopping list for tomorrow. Trip to the lottie for Roobarb planned also.

| If you add fresh grated ginger to stewed Rhubarb it's really scrumptious - I like it with good vanilla ice cream or if I'm feeling wicked - cornish clotted cream... |
