Had this tonight & it's delish! Very Happy

Filling:
300g rhubarb, chopped into 1" pieces
150g sugar
4 tbsp cornflour
1/2 tsp salt

Topping:
225g cream cheese
75g sugar
1 large egg
1 unbaked pastry pie shell (or make your own if you're clever!)

Method:
Put chopped rhubarb in a saucepan with the sugar, cornflour,salt & a tbsp water. Cook over low heat until thick. Pour into the unbaked pie shell. Bake at 425*F/220*C/Gas Mark 7 for 10 minutes.

Mix the cream cheese, egg & sugar until creamy. Pour on top of the rhubarb. The filling will puff up, so don't fill right to the top of the pastry shell.
Bake at 350*F/170*C/Gas Mark 4 for 30 minutes or until the centre is set.

Serves 8

The recipe doesn't say which sugar to use, so I used Muscovado sugar in with the rhubarb, but ordinary caster sugar in the egg & cheese mix.

Even my boys loved this & had seconds too! Very Happy

Hmmm.... sounds yummy!

Cream cheese added to the shopping list for tomorrow. Trip to the lottie for Roobarb planned also.

If you add fresh grated ginger to stewed Rhubarb it's really scrumptious - I like it with good vanilla ice cream or if I'm feeling wicked - cornish clotted cream...
