For the Pud.
170g Dates, pitted and chopped, this is a cup when chopped (optional, but actually really good)
1teaspoon Bicarb soda
60g butter
170g Caster sugar ( 3/4 cup)
2 eggs
170g SR Flour ( 1 1/4 cups)
1/2 teaspoon Vanilla Essence
For the Toffee Sauce...( I usually double this)
200 g Brown Sugar
1/2 cup Cream
130g Butter
Vanilla Essence
Grease a cake tin (I use a glass pudding bowl).
Pour 300 ml boiling water over dates,add soda, leave for ten minutes.
Cream butter and sugar together, add the eggs one at a time, add vanilla, beating well after each addition.
Gently fold in the flour and the date mixture.
Pour into the prepared tin.
Bake in the centre of 160degree oven for 30-40 min ( use the skewer to test. I often find it takes an hour to cook).
Sauce
add all ingredients into a pan, bring to the boil, then simmer for 5 to 10 mins.
When the pud has cooled, take it out of the tin, pour a little sauce over the pud and return to the over.
Serve hot with sauce, cream and ice cream! |
