Another of my fave Mary Berry recipes:
Chocolate Fudge Squares
3 level tbsp cocoa
3 tbsp hot water
175g soft margarine
175g caster sugar
3 eggs beaten
175g self-raising flour
2 level tsp baking powder
Topping:
75g butter
50g cocoa, sieved
4 tbsp milk
225g icing sugar, sieved
1. Heat oven to gas 4/180c/350f. Grease and line an 11 x 9 inch roasting tin.
2. Blend cocoa with the hot water and place in bowl. Add all other cake ingredients. Beat well until thoroughly blended.
3. Turn into prepared tin, level the top and bake in oven for about 40 minutes until sides of cake are beginning to shrink away from the tin and top of cake springs back when lightly pressed with a finger.
4. Turn out and leave to cool on a cake rack.
5. For the topping, melt the butter in a small pan, add the cocoa and cook for a minute. Remove from the heat and stir in the milk and icing sugar. Beat until smooth then leave, stirring occasionally, until of a spreading consistency. Spread thickly and evenly over the top of the cake. Leave to set and cut into squares to serve.
