One of Mary Berry's recipes:-
Carrot Cake
150ml sunflower oil, plus extra for greasing
250g wholemeal self-raising flour
2 tsp baking powder
150g light muscovado sugar
60g walnuts, coarsely chopped
125g carrots, grated
2 ripe bananas, mashed
2 eggs
1 tbsp milk
Topping:
250g low-fat soft cheese at room temperature
2 tsp clear honey
chopped walnuts to decorate
18cm/7inch square cake tin
1. Lightly grease the cake tin and line the bottom with baking parchment.
2. Combine all cake ingredients into a large bowl. Mix until thoroughly blended. Turn into the prepared cake tin and level the surface.
3. Bake in preheated oven gas 4/180c/350f for about 50 mins until the cake is well risen, firm to the touch and beginning to shrink away from the sides of the tin.
4. Leave the cake to cool in the tin for a few minutes then turn onto wire rack to cool completely.
5. For the topping, mix together the cheese, honey and lemon juice. Spread on top of the cake and sprinkle the walnuts over the top. Store the cake in the fridge until ready to serve.
(I don't think I've used this topping, I've used another one from another carrot cake recipe. This cake is lovely and doesn't last long in our house) |

Hmmmmm... sounds lovely. I'm looking for a good carrot cake recipe (I'm not a huge fan of it, but its my OH's favourite).
What's the other topping recipe you do? (she asks, nipping off to check in the kitchen that she has all the cake ingredients... ) |

This one - good old Mary Berry again:-
50g butter, softened
50g cream cheese
100g icing sugar, sieved
few drops vanilla essence
Beat all ingredients together until thoroughly blended, spread evenly over cake. Leave to harden slightly before serving.
I will do the other one some time because it sounds nice. I just didn't have any honey at the time. |
