From my (very old) Dairy Book of Family Cookery
Coffee Fudge Pudding
225g butter
350g soft brown sugar (I use muscovado)
2 eggs beaten
90 ml coffee essence
225g self-raising flour, sifted
50g walnuts, chopped
1 pt milk
1. Whisk the butter and beat in 225g sugar. Gradually beat in the eggs with the coffee essence. Lightly beat in the flour with the walnuts adding a little of the milk to give a soft dropping consistency.
2. Spoon into a 2.3 litre (4 pt) buttered oven proof dish.
3. Blend together the remaining brown sugar and milk. Pour evenly over the pudding misture. Bake in the oven at gas 3/170c/325f for about 1 hour 25 minutes until spongy to the touch. This pudding separates to give its own built-in sauce.
Apparently serves 8 (but not in our house!)
(Since having my food processor I have bunged all the ingredients, bar the walnuts and the milk/sugar combination, in the processor and mixed all at once then added the walnuts and a little milk, if needed.) |
