Ginger Beer Plant:

1/2 oz general purpose dried yeast
1/2 pint water
sugar
ground ginger
Juice of 2 lemons (for day 8 )

1) Put yeast in a jar, add water, 2 level teaspoons sugar, 2 level tsp ginger and mix.
2) Cover jar with polythene kept in place with a rubber band
3) Each day for 7 days add 1 level teaspoon each of sugar and ginger
4) Strain mixture through fine muslin and add lemon juice to liquid

Sediment should be split into 2 jars and 1 plant given away. To the sediment add 1/2 pint water, 2 level teaspoons each of sugar and ginger and carry on as before. Liquid can be used for either recipe below.

Sweet Still Ginger Beer

Liquid from plant
1lb Sugar
1 pint water

1) Put all in saucepan. Stir until sugar is dissolved.
2) Bring to boil and simmer for 5 mins to ensure yeast is killed.
3) Make up to 1 gallon with cold water
4) Bottle ginger beer, cork tightly. Keep for a few days before drinking.

Dry Sparkling Ginger Beer

Liquid from plant
2oz sugar
water

1) Add sugar to liquid and make up to 1 gallon with cold water. Stir to dissolve sugar.
2) Bottle into screw topped bottles. Tighten lids well. Keep 7-10 days until sparkling and ready to drink.

(This is the one that may get a bit ott!)
