Chocolate Mocha Mousse
Adapted from a recipe in "One is fun", by Delia Smith
Serves 1 - just multiply it up for however many you want...
2 oz plain chocolate (I usually use Bournville)
1 egg, separated
1 dessertspoon rum, brandy or water
1 rounded teaspoons coffee granules plus 2 teaspoons hot water
Put a small basin over a pan of barely simmering water. Add the coffee granules and the 2 teaspoons hot water. Stir to dissolve the granules.
Break the chocolate into small pieces and add it to the basin. Leave to melt. Stir until you have a smooth sauce.
Remove the mixture from the heat, beat the egg yolk and add it to the mix, stirring.
Stir in the rum, brandy or water, and leave it to cool for about 10 minutes.
In a large bowl, whisk up the egg white until it forms soft peaks (firmer peaks if you like a firmer mousse).
Using a metal spoon, fold the chocolate mixture into the egg whites.
Spoon the mixture into individual glasses or dishes and refrigerate for a couple of hours.
Enjoy
I've also done chocolate orange mousse by replacing the rum/brandy/water with orange juice, leaving out the coffee and adding very, very finely grated orange rind to the mix instead. |

The original one had cream on top. And I've seen some recipes with cream in them too...
Just a thought NannyP, if you have a fav recipe for choccie mousse then please do add it to this thread I'm more than willing to experiment in the search for the perfect choccie mousse |

Well, I tried and failed. I didn't have chocolate (bar of) so used G & B's cocoa powder, which was difficult to blend
Added Brandy and Chocolate Ruby and a little butter and.......
YUK
should it have sugar?
I guess if I'd used chocolate rather than cocoa powder it might have been sweeter.
I basically cocked it up, and will have to do it again with the correct ingredients another time.
