OH was coming down with a cold yesterday and I remembered chicken soup was supposed to help. AFAIK onions and garlic are good for the immune system and parsely has iron and vitamin C in it, so, with the remains of a roast chicken in the fridge, I kinda threw this together (at last all those cooking tips from Mojo must have finally rubbed off on me - I did something without a detailed recipe Wink )

Remains of one roast chicken
boiling water
1 very large onion, peeled and chopped
couple of medium potatoes, peeled and cut into small chunks
few cloves garlic, peeled, whole
few sprigs of parsley

Break up chicken carcass. Put in saucepan and cover with boiling water. Bring to the boil, then leave to simmer very low for 2 hours (I put it in the oven on lowest setting).

Drain contents, saving stock. Wait until cool enough to handle.

Remove everything from the bones. Put any decent meat to one side for the soup and chop up small. (Feed remaining "bits" - checking carefully there are no bones - to one very happy dog!)

Cool stock, until cold enough to skim of any fat on surface.

Put stock back into saucepan and bring to the boil.

Add the onion, whole garlic cloves and parsley. Simmer for 10 minutes.

Add potatoes, and simmer for another 15-20 minutes (until the potatoes are cooked - doesn't matter if they fall to bits).

Cool a little, then liquidize.

Put back in saucepan. Add chopped up chicken meat. Heat and serve with chunks of nice bread.

Not bad IMHO (though as its my first chicken soup in 20+ years, I'm probably not the best to judge! OH did like it though...)

That sounds nice....never made chicken soup before (I dont like the thought of eating "boiled bones") Although i do like tinned chicken soup ! Wink

here we go jewish penicillian or my french hen soup call it what you like................3 spuds 3 carrots 3 cloves garlic 3sprigs parsley 3 onions and 3 celery stalks (if like). all cut small.........cover with water and bring to boil.......simmer till soft about 10 mins (not crucial)..stand aside.new pan ..add broken up carcess to water with pepper NO salt and boil till meat falls off bones.......clean bones....return meat finely cut to liquid.......................cool ....remove fat.....put 2 pots in one...........then and this is the important bit .........simmer NEVER boil for a few minutes ...enjoy with a bagette and butter...............if by any chance you have any left allow to cool and refrig for next day.....a good pinch of curry powder or paprika or fine herbs vary the taste..............mojo.note the pepper goes in bones pot not veg pot
