Got this book on Saturday as I didn't quite order it in time for Christmas Rolling Eyes , but did get it included in the Battery Hen pot. (through Amazon, of course. Wink )

Getting quite a collection of Hugh F-W books now - just wish it made me a better cook. Confused

Some interesting recipies including home-made butter & curing your own bacon!

£7.99 at WaterStones... Wink

(Book tokens over Xmas, had to go there and spend them on something Rolling Eyes )

Anyway... recipe for easy flat breads:

For 8:

250g plain flour
1 level tea spoon salt
1 tablespoon oil (olive or sunflower)
about 150ml warm water

1. Sift flour and salt into a bowl
2. Mix water and oil in a jug
3. While mixing with your hand, pour the water into flour until you get a soft, sticky dough
4. Knead dough on a floured board for about 5 mins until the dough feels smooth and plump.
5. Cover dough and rest for 15 mins.
6. Divide into 8
7. Roll each piece into a ball.
8. Roll out on a floured surface with a rolling pin to a thin round the size of a small plate.
9. Heat a frying pan really hot, then turn down to medium.
10. Shake / brush any extra flour off flatbread and carefully lay in the hot pan.
11. Cook for 30-60 seconds, until you see little white spots forming on the surface.
12. Flip it over - there should be brown spots on the cooked side.
13. Cook for another 30 seconds.
14. Remove from pan and wrap in a clean t-towel to keep warm and soft while you cook the others.

This is one of the reasons I bought the book (even though its more aimed at kids!) I love tortillas aka wraps, but the list of ingredients in some shop bought ones really puts me off...

Hmmm, the home made bacon was the other one that convinced me I could not leave the shop without it Very Happy
