I found a recipe in Valentina Harris' Italian Family Feast for Tiramisu (Italian style trifle)- it uses up 8 eggs! Very indulgent, very lovely and very fattening! If anyone wants it, PM me. Very Happy

Here it is folks: (contains raw eggs)
Tiramisu - Pick me Up
serves 8-10

500g mascarpone cheese
8 eggs, separated
8 tbsp caster sugar
100ml very strong espresso coffee
300ml weak coffee
5 tbsp brandy or Marsala wine
about 30 boudoir biscuits
coffee powder or chocolate powder for dusting

Whisk the mascarpone cheese with a wooden spoon to make it soft and creamy. Beat the egg yolks in a separate bowl until fluffy and pale yellow. Add the sugar to the egg yolks a little at a time until you have a smooth texture, then add this to the cream cheese mixture. Stir in the strong coffee. Whisk the egg whites separately until stiff, then fold them into the cheese, egg and coffee mixture. Set this mixture aside.

Pour the weak coffee and brandy/marsala into a bowl. Dip the boudoir biscuits into it one at a time, to moisten them, and arrange the biscuits in a later in the bottom of a shallow bowl. Cover with some of the cheese mixture, then cover with more moistened biscuits. Continue to make layers in this way until you have used up all the ingredients, ending with a cheese mixture. Sprinkle with coffee or chocolate powder and chill for at least 1 hour or until required.

Sounds gorgeous!!!
But am I missing something? Where do you use the strong coffee??

Tiramasu is one of my favourites!!

Edit - DOH!!!! Spotted it!!! Been to a funeral today so am a bit tiddly!!! LOL

Now amazingly enough, I managed to find most of the ingredients, apart from boudoir biscuits. I got trifle sponges... also found amaretti - but not sure if it's too strong a taste along with the marsala? Any opinions?

Regarding 'boudoir' biscuits... didn't realise that boudoirs and sponge fingers are one and the same!!! (Santa put in sponge fingers in Suz's Xmas Tiramisu, BTW...) Doh! Rolling Eyes
