I don't know if it's available 'south of the border', but there's this lovely oak-smoked (cooked) salmon called Salar Salmon, from South Uist here in the Outer Hebrides. It's supposed to be a favourite of Rick Stein. Their website is: www.salar.co.uk
Here's a recipe I'm making tonight:
1 courgette (zucchini), chopped into chunks
1 sm onion, chopped
5 or 6 mushrooms, sliced
dill
Old Bay Seasoning (optional as it's a US ingredient)
1 package of Salar Salmon
250g plain yogurt (I use organic full fat, yummy - use about half of a 500g container)
pasta
While putting on the pasta to boil (enough to feed everybody, use your own judgment, I use sight method), on a med-low heat, gently saute the onion in extra virgin olive oil (about 1 tbsp) to soften. Add the courgettes and onion. Also saute to soften. Add the dill and Old bay seasoning. Lower heat and let cook until pasta is done. Just before pasta is ready, open the salmon and put in with veg, just to heat through. Take skillet off the heat. Stir in the yogurt and drained pasta. Serve and eat! |
