Hi,

Adding some ground almonds to the brandy butter is also v. tasty

I use unsalted butter, unbleached castor sugar (we like the crunch) ground almonds and a really good slug (or two) of brandy or rum.

Cream the lot together - put in fridge and it will keep a couple of weeks - but don't make too far ahead - or you find it has all mysteriously disappeared and no one is admitting to taking anything.

Mojo - you used to be able to get frozen double cream, will investigate - and if it's still available - next time I'm coming over will pm you and can arrange to bring some over - we have an electric car fridge thing - and should be able to keep it frozen on journey over. I think we're pretty close to where you in in France....
