So: I cheat and buy already rolled Pastry. I also buy frozen Blackcurrants if I don't have any from the bushes in the garden. Roll Pastry and line a shallow plate, fork it and blind bake. Pour the blackcurrants onto the pastry and add sugar, just keep adding, I don't know how much sugar but just pour and pour and pour, I'm amazed how much sugar they take. Put the pastry lid on, make a little cut in the centre for air and bake in the oven till golden! Serve hot with cream and icecream.
