Deb fancies trying some lamb and doesn't know how best to cook it, so come on everyone - let's have your favourite recipes. I'll have a freezer full soon and would appreciate some new ideas too!
Personally I think simple is best, but then I'm usually in a hurry! Tonight we had chops done in an oven dish covered with chopped tinned tomatoes and chives and rosemary from outside the back door. I also like roast lamb sprinkled with a little salt and the skin pierced so that sprigs of rosemary or cloves of garlic can be inserted. |

We don't have lamb that often as sadly it's a bit too expensive for me,
Even when we do, it's usually only roasted with rosemary and garlic.
Although, adding redcurrants can make a nice addition.  |

Lancashire hotpot
peel and thinly slice some potatoes
Use a third to cover the bottom of a casserole dish
next layer is lamb chops or lamb steaks
then a layer of carrots
repeat with another layer of potatoes, chops and carrots
add stock to level with the top
Finish with another layer of potato
Cook with a lid on for 2 and a half hours then remove lid for half an hour.
The top layer of potato goes really crispy
Takes ages to slice everything up but it's worth it |

In my pre veggie days I remember lots of stabbing a leg of lamb and poking in sprigs of rosemary and chunks of garlic before roasting it... yummy!
My SIL did one of Delia's recipe's for a roast leg of lamb with lots of roast veggies too - think it used a bottle of red wine as well The OH raved about it... here we go:

| I love lamb. We have a lamb farmer and always get a lamb for the freezer! its so yummy. We tend to have to roasted with rosemary and garlic ( like most), or the casserole is yummy too. |

This is one of my Dad's recipes :
get a leg or shoulder of Lamb
Mix together equal amounts of ground ginger and salt and pepper and rub all over - place in roasting dish
Pour cider over and up to about an inch up the side
spread the skin side with honey and put on Rosemary - as much or little as you like
Roast on hot for 20 minutes (lid off ) which in my oven is about 220 - then reduce to about 170/ 180 & cover for the rest of the cooking time - we do about 2hrs - but we like it well done with this recipe - is usually very tender and falling off the bone
Gravy made with the juices is lovely too |

I'm cooking this today, it smells wonderful, can't wait for dinner  |
