Okay, you gourmet types, tell me about copper pans, please?
I've been using them here, as JP was a chef, I have noticed how they cooked the bacon nicely, but wondered what other things I could know? Bastards to clean though!! Laughing

Well all I know about it is it is a great conductor of heat and that you shouldn't use it with acidic foods - unless it is lined

It is also quite expensive (I believe) - but gorgeous Smile

I've enjoyed using them, and they have cooked well and evenly; Don't know if they're lined. You have to remember to use a cloth or oven glove to hold the handle Embarassed Embarassed and they so heavy.

I'm pretty certain that for cooking they MUST be lined with tin or you'll poison yourself. It is easy to check, the inside cooking surface should be completely grey and NOT copper-coloured. If any copper is showing I daresay you can get the pans re-tinned, but goodness knows where.

By 'tin' are you referring to aluminum? Don't buy them if they are aluminum. Only buy those that are stainless steel.

1. Cooking in aluminum has been suggested to cause Alzheimer's.
2. Stainless is heavier and a better conductor of heat.
3. Stainless is easier to keep shiny clean.
4. They cost a fortune either way...get the best you money can buy. Wink

I wasn't buying Deb, I was using them here, and they're damned heavy, so I think (am positive) they're good ones Laughing
