I make a Dundee so do not ice this is the Bero recipe
1kg Icing Sugar
5 medium egg whites
2 tsp lemon juice
2tsp glycerine to keep icing soft
6-7 inch half above quantity
8-9 inch exact quantity
10-11inch 1 1/2 times the quantity

Beat it well. . . . . the more you beat the softer and easier to handle it will be. . . . softer is a relative term in regards to royal icing

| made it today.........iced the cake.....decorated it now just let it dry out and then EAT IT |
