I decided to have a go at Roast beef
what was a large family joint has shrunk to a chop!!!
i put it in early then went to see to the birds
when I came back look what has happened!!!! AHHHHHHHHHH
Can any one suggest a rescue plan, |

| no problem ~ get an aga, put the meat in the roasting dish and put the whole kitchen in the aga ~ that should do it. |

I don't think that you can rescue it! Tips for next time though:
Seal your piece of beef in a frying pan just by heating all the way round it - that way the juices can't escape.
Put the beef in the oven for a long period of time on a low heat. I generally put a roast in at about 180C and you can leave it for ages. Does need a bit of prior planning though.
I also do lamb very slowly on a low heat but I add home grown rosemary to it by making little nicks in the skin and posting rosemary sprigs into them.

cheffie tip...........seal all surfaces in fry pan .all being the answer.......then put 1 inch of water in the roasting tray put in medium oven for 30 mins a pound turn every 30 ims and replace water before it evaporates..result soft tender moist beef with minimum shrinkage........or cut in 2 inch thick slices and pan fry super luv mojo  |
