Some recipes are quick, some more difficult. Basic ice cream is 1/2pt double (heavy) cream, 1/2 pt milk, 6oz of sugar, beat together, put in a machine and set it off.

Supermarket/mass produced ones often have gelatine, guar gum, xanthim gum, caragine and nuclear & toxic waste (ok, the last one I'm making up, but near enough). Real ice cream uses cream and eggs as thickening agent.

Till recently we had a philips ice cream maker. This is the simplest sort, you leave a special bowl filled with gell in the freezer, and use that. Such as:
We've now got one with a built in freezer that makes it a lot quicker and smoother. The one we chose was a Gaggia one.

Yup, that's the one we had. Worked really quite well.

We bought one from our ill gotten gains from flogging stuff on ebay. Best-of-italy.com had them on special offer this last week or so, so it was £220 delivered.

The home made we had last night was a lot tastier than Mr Whippy, but a similar consistency. The cat tried to pinch mine!

Basic mix 1.

4 egg yolks
Beat the egg yolks and sugar together till they are pale yellow (recipe books say white, but that's with supermarket eggs, not real ones). Heat the milk till it's hot-bath temperature, add the double cream, and beat into the yolk mixture. Custard made.

Stephen...good minds think alike! Chocolate ice cream for desert everyone! Thank goodness I am too far away, looks like they will all be coming to your house for it. Better get busy and make up a few more batches of custard!  |
