The base mix is just as creamy, but with less moisture and more thickening agents added to it so that when you add fruit, which contains it's own added juices, the ice cream will remain firm.
Corn Starch...hmmmm, do you not have that over there? Don't know how to explain it. It is a white floury sort of powder. Used to thicken sauces like you would use flour in a rue. |
