Don't worry - he's getting looked after. We have a new way to use up surplus eggs. It's called an ice cream machine...

ok, so I got interested at the mention of ice cream in another thread, and was going to ask a question but........mojo mod off topiced it. So thought I should ask here. How do you make ice cream, is it quick, does it have gelatine, what's the best machine (not most expensive, you understand) for the job? What ingredients does it need besides eggs? thanks for any help

Hi, I have the Phillips ice-cream maker. You have to prefreeze the bowl but it works really well. I think it is the best in that price range. (under £30). Would quite like one of the ones that you don't need to prefreeze but then you are talking £250-300!

I use a Krups Ice Cream maker....LOVE IT! Model #358 incase you want to know. You keep the base (bowl) frozen in your freezer until ready to use. Then when the ice cream mixture is ready, you pour it in...turn on the paddle and 40 minutes later you have the best soft serve ice cream you have ever tasted!

Vanilla Ice Cream:
1 cup (250 ml) milk
1/2 cup (125 ml) sugar
2 eggs
2 cups (500 ml) cream
2 tsp. (10 ml) vanilla extract
Warm the milk in a small pan. Whisk the eggs with the sugar in a separate bowl. Slowly add warm milk to mixture continuing to whisk. Pour mixture back in the pan and heat slowly until thickened, stirring constantly (looks like very liquid pudding). Do not boil! Let cool to room temperature, add cream and vanilla and chill.
Variations:
-Coffee Ice Cream
dilute 2 tsp. (10 ml) instant coffee in the hot mixture.
- Peppermint Ice Cream
replace the vanilla by 2 tsp. (10 ml) peppermint extract.

Chocolate Ice Cream:
1 cup (250 ml) milk
2/3 cup (150 ml) sugar
1/3 cup (75 ml) cocoa powder
1 egg
2 cups (500 ml) cream
1 tsp. (5 ml) vanilla extract
Mix milk, egg and sugar in a small pan. Heat slowly until thickened, stirring constantly (looks like very liquid pudding). Do not boil! Mix in cocoa powder. Let cool to room temperature, add cream and vanilla and chill.

Base Mixture for Ice Cream:
2 cups (250 ml) milk
4 egg yolks
1 tsp. (5 ml) corn starch
1/2 cup (125 ml) sugar
Bring milk in a pan to a boil. Beat egg yolks, sugar and starch in a bowl until mixture is nearly white. Pour the hot milk into mixture, constantly stirring. Return mixture to pan and heat, continuing to stir, until it slightly thickens. Do not boil! Chill.
To this base mixture you can add:
2/3 cup (150 ml) chopped or pureed fruit
1/2 coup (125 ml) roasted almonds
2/3 cup (150 ml) chopped hazelnuts
1/2 cup (125 ml) chocolate chips

(I am making chocolate ice cream today)

I just want something which will do the job in not too long. I never thought ice cream was made with eggs.
I was browzing on amazon and see they sell ice cream makers, but I know nothing about them.

I know what you mean about using up eggs...but something I am going to try is making some merigue with eggwhites as uses lots and make some lemon curd with the yolks!

Homemade Angel Food cake will wipe out a dozen egg whites and then use the yolks for a homemade custard to drizzle over your piece of cake! Very Happy

Guaranteed not to last more than a day. Wink
