| I know that you can freeze shelled uncooked eggs, has anyone tried it and what where the results when you cooked with them? |

| they are ok you have to whisk them , add a little salt for savoury and a little sugar for sweet , ice cube trays are good as the larger ones holds equivalent 1 egg in each cube they only keep for 6 months |

Hi GillyC, Thanks for the reply. My book on how to freeze explains the methods required but what I really wanted to know was if anyone had tried freezing eggs and what the results were when they used them for cooking and what did they use them for.

You can't freeze them whole and in the shell. . . . because as with all things moist they contain water and as they freeze the water will form crystals and break down the structure of the yolk/ white when you defrost, also they will expand as they freeze and crack the shells. Do as Gillyc says and whisk them first, the whisked mixture thickens with age in the freezer.
If you want to store whole in shell eggs you need a waterglass solution which may or may not be still available from chemists. Another alternative is to coat each egg in melted lard and let it set, this will stop the egg deteriorating so quickly as it seals the shell. Such eggs can be kept again for about 6 months but they are really only suitable for cakemaking.

Thanks for the reply but I did explain in my posting that I know what to do to freeze eggs.
My posting was just to enquire if anyone had used eggs they had frozen, either for sweet or savoury dishes and what the results where like.

| Like I said they are OK I'm not sure what else you want us to say ? all cooking is somewhat hit and miss I do not keep a log of everything I cook and what eggs I use sometimes they are warm from the nest others from the freezer obviously it is going to make a difference ! |

| Thanks Gilly C, A friend has a glut of eggs at the moment and both of us weren't sure, not having used them, whether it was worth freezing some. I just wondered if anyone used them and if they found any significant difference to fresh eggs in things like cakes, quiches, omelettes, scrambled eggs, etc. |
