This was in Saturday's Guardian magazine, yummy. I had some Minced Lamb is was gonna make Shepherd's Pie with, and unusually (for us) had some manchego in the firdge (going off!!)
I made these on Sunday, they were gorgeous.

Lamb and sheep's cheese rissoles

A great supper number. I was really pleased with this dish. It may not be the acme of originality, but when it comes to using up leftover lamb, it's a grand alternative to shepherd's pie.

600g cooked lamb
6 tbsp olive oil
1 onion, finely chopped
200g sheep's cheese, grated
4 tbsp breadcrumbsSalt and pepper
2 eggs

Mince the lamb, or whizz it up in a blender. Heat two tablespoons of oil in a frying pan. Over a moderate heat, fry the onion until translucent; about five minutes. Decant into a bowl, along with the lamb, cheese and two tablespoons of breadcrumbs. Season. Add the eggs and mix thoroughly.

Carefully mould the mixture into whatever shape and size you think rissoles should be. Roll them in the remaining breadcrumbs. Heat the remaining oil in a frying pan and fry gently until brown and crunchy on the outside. Very nice with tomato sauce.

I presume it's sheeps cheese, but I've not seen it.

No, we're having it for tea on Friday!!
I have bought the Sausage Rolls though Knobby! Laughing

Manchego is hard Sheep's Cheese, I imagine you could uuse an alternative hard cheeese.

Hehehehehe....no, its ok, im just joking.....I dont like sheeps cheese anyway (Although ive never tried it) I only like Cheddar !!

Its like I also dont like cauliflower, sweetcorn, mushrooms & Chinese food.......(never tried any of them & I dont have any intention of trying them either)

Never tried Chinese! How is that possible. I don't like it either but I have eaten it.

I have some lambs belly in the freezer ( given to me from our friendly farmer) but I don't know what do to with it! Any ideas anyone??

Same here re Peas
I've never eaten peas in fact have a phobia of them - and for 30 yrs didn't know why

(then my aunt told me , my granny had told me they'd grow in my stomach if I ate them ) *shrugs* still think they're evil though!

Plus had never eaten an egg until 3-4 months ago - but thought I'd better get used to them with wanting chicks and all ! - so forced myself and now enjoy scrambled and omletted Very Happy - and like them
Peas r still evil though !

Heathhog,

The sugar in a fresh pea is amazing! go on but you can't try just one, you need a hand full and they have to be fresh!
