| Oxtail Stew - yummmmy! Roll oxtails in flour and a little salt. Brown in fat in frying pan (you don't have to be religious about this part - just so a few sides of the oxtail are a bit brown) put in casserole with chopped up veg (onions, carrots, swedes, parsnips) put enough stock or boiling water and dissolved stock cube in to nearly cover and put in the oven for about 2-3 hours on a lowish heat. Take out and test flavouring, it will probably need salt (I would add marmite but I don't know if you're a marmite person) If the meat is falling off the bones it's done, if not put back until it is. It's better made one day and eaten the next. Allow it to cool down so you can take the fat off the top and reheat for a scrumptious supper - add dumplings if you want. |
