I have a glut of courgettes - I found NannyP's courgette frittata recipe which sounds yummy - any other tried and tested ones? I usually fry the slices in olive oil with garlic but that's getting boring now.

Add a dollop of tomato puree to your usual + some basil and maybe a spot of water.

Or slice & fry in butter some button mushrooms and add to your usual.

Or fry some cubed streaky bacon and add.

Just a variation on the usual really - but nice with it.

My courgettes are next to the potatoes Confused

Thanks for that Mojo - I'd never thought of making veggie smoothies. Will definitely try that.

Thanks for that Gilly C - I have used them in ratatouille, which I love. It freezes well too. Never thought to use them raw - will try that.

Both sound yummy ideas - note to self: find packet of courgette seeds, now where did I put them?
