| I have a glut of courgettes - I found NannyP's courgette frittata recipe which sounds yummy - any other tried and tested ones? I usually fry the slices in olive oil with garlic but that's getting boring now. |

Add a dollop of tomato puree to your usual + some basil and maybe a spot of water.
Or slice & fry in butter some button mushrooms and add to your usual.
Or fry some cubed streaky bacon and add.
Just a variation on the usual really - but nice with it.
My courgettes are next to the potatoes

| courrgys .....use as marrows or squashes but smaller .......stuff them/ chop in tiny cubes and make a french salad dressing/ boil and layer with potatoes etc in a fish pie /soup them/make chutney(add a good pinch of ginger to add zest)/fry them and cook on a bbq even make veg smoothies with them |

| I like them in roast veg, ratatouille and cut into julienne and stir fried with prawns also raw in salad if very tender |

| Thanks for that Gilly C - I have used them in ratatouille, which I love. It freezes well too. Never thought to use them raw - will try that. |
