Can I make mincemeat with grated duck fat? Ihave some in the fridge and will use this along with butter for the pastry.
I have come across a recipe that mixes all the ingredients, but doesn't cook. Looks good to me, what do you think?

To make 2 Ib mincemeat:
1Ib mixed dried fruit
4ozs melted butter (I always use butter, not margarine)
4ozs cooking apples - peeled and grated (weight when prepared)
4ozs brown sugar
2-4 ozs blanched chopped almonds
4ozs glace cherries
4ozs chopped candied peel
1 teaspoon grated lemon rind
1 teaspoon grated orange rind
2 tablespoons lemon juice
1 teaspoon mixed spice
1/4 to 1/2 teaspoon ground cinnamon
1/4 to 1/2 teaspoon grated nutmeg
4 tablespoons Cointreau
Method: Mix the ingredients thoroughly. Put in clean, dry jars (press firmly into place to avoid having big air bubbles in the jar) and seal firmly (I wash them, allow them to dry, and then put into hot oven for five minutes to steralise them). Keep in a cool, dry place. Do not reduce the quantities of sugar, butter or alcohol if you wish the mincemeat to keep well.
Also, as with any recipe, if you use the best ingredients, you get the best end result. Don't skim on stuff too. I often put a few extra almonds in, a few extra cherries and a good slosh of Cointreau. After all, it is only xmas once a year!!!! I hope you like the recipe.

I HAVE JUST REALISED, I FORGOT ONE FINAL ELEMENT IN THE RECIPE I POSTED AT THE START (OOPS). I PUT THE MIXTURE INTO THE FOOD PROCESSOR FOR A QUICK WHIZZ AT THE END. YOU CAN JUST POT UP THE WHOLE FRUIT, BUT I LIKE THE TEXTURE OF THE LIGHTLY PROCESSED MIXTURE. SOOOOOO SORRY!!!! |

| not sure about the duck fat how strong flavour has it ? we very rarely eat duck as it does nothing for me, suet has no taste to speak of, there is a vegetarian suet but not sure what it is made of sorry can't be of more help |

Vegetarian suet is readily available in supermarkets in the United Kingdom although of course, it isn't suet at all. It is made from fat such as palm oil combined with rice flour. It resembles shredded beef suet, and is used as a substitute in recipes but with slightly different results than the animal suet.

Unfortunately, outside the UK and South Africa suet is as rare as diamonds and sapphires. The idea of suet causes most to vomit on the spot, it seems. We have to get friends and relatives pop a packet in the post from time to time so we can make dumplings or steamed puddings.
We've successfully put some Swedish friends off both mince pies and Christmas puddings once they knew that a) suet is in it and b) what suet is. |

Getting the duck in the grater is the worst problem Nanny P
I wouldnt use duck fat to be honest Gilly is right it can be a bit strong depending on the diet of the duck.
Goose fat is better,I have used that quite a bit and prefer it to plain Lard for most cooking

| i wouldnt use duck fat as the flavour is too strong for a sweet dish ..........but save it to roast your taties and parsnips and carrots in ..................that is heaven on a plate........want to practise on me............. want some liquer to flavour your mincemeat??p.s. |

Kathy it is probably a bit late for this year but In one of the Nigella books there is a recipe for suet-free mincemeat, or alternatively am more than happy to send a few packs over as it is not exactly a heavy item.

Well, I found mincemeat in one of the nearby supermarkets, so for future Christmas's, panic over. Thanks Heather, but no need now, and when we next come over to the UK (Julyish), I'll add suet to my very long shopping list.
Mojos didn't come, as Potty not well enough, so no mince pies anyway
Don't tell Mojo, but we didn't cook the Christmas Pud either  |
