|
|
This is my single more favourite soup in the whole wide world, I made it for christmas day starters and everyone raved about it. Its great if you have a sweet tooth as well!
SWEET POTATO AND ORANGE SOUP
Serves 6
• 20 g butter
• 1 large onion, finely chopped
• 500 g sweet potatoes, peeled and chopped
• 200 g potatoes, peeled and chopped
• 2 tablespoons fresh orange juice
• 700 ml vegetable stock
• ½ tsp ground coriander
• 150 ml milk
• Salt and freshly ground black pepper
Serve with crème fraîche and crispy streaky bacon bits
Melt the butter and cook the onion until soft, without colouring. Add the sweet potatoes, potatoes, orange juice, stock and ground coriander. Cover, bring to the boil and simmer until the vegetables are tender. Cool a little then whiz, taste for seasoning and serve with crème fraîche and the crispy bacon. |

Oh yes! My lot are already looking forward to it!
Debs, what's not so good about the end of May Bank Holiday? (I thought we almost agreed to that date last year? ) |
