This is my single more favourite soup in the whole wide world, I made it for christmas day starters and everyone raved about it. Its great if you have a sweet tooth as well!




SWEET POTATO AND ORANGE SOUP

Serves 6


• 20 g butter
• 1 large onion, finely chopped
• 500 g sweet potatoes, peeled and chopped
• 200 g potatoes, peeled and chopped
• 2 tablespoons fresh orange juice
• 700 ml vegetable stock
• ½ tsp ground coriander
• 150 ml milk
• Salt and freshly ground black pepper

Serve with crème fraîche and crispy streaky bacon bits


Melt the butter and cook the onion until soft, without colouring. Add the sweet potatoes, potatoes, orange juice, stock and ground coriander. Cover, bring to the boil and simmer until the vegetables are tender. Cool a little then whiz, taste for seasoning and serve with crème fraîche and the crispy bacon.

Sounds lovely....since our "meet" at Staminas last year, ive really started liking sweet Pots !!

I love sweet potatoes, but don't remember having them at Stamina's?? Confused

Me and Lisa tried them, cooked over the BBQ....they were lovely !

think they bought them out after most people had eaten - Dominico started cooking loads more stuff Smile

Must contact Stamina about this years if everyone is up for it !

Debs, what's not so good about the end of May Bank Holiday? (I thought we almost agreed to that date last year? Confused )

Jess is going on a school trip in June thats costing loads and I dardn't take them out of school again for a while, they missed loads between june and december last year
plus dads coming at the end of may to help me paint the outside of the house

they don't get a week in may here, too soon till they break up for the summer
plus I can't drive very great at the moment, given up on my manual and gone back to using the OH's automatic Confused
