A low fat, no need for a deep fryer scotch egg recipe!

1lb of sausage meat
8 hard boiled eggs
2 beaten eggs
2 cups of bread crumbs (4/5 slices)
Herbs/chilli flakes/whatever else you fancy to season the meat.

1. Preheat oven to 180c
2. Mix suasage meat w/ seasonings..we used chilli flakes
3. Make a 1/8" deep rectangle with an1/8 of the meat on a lightly crumbed surface. Place egg at one end and roll up, pinching the ends to seal.
4. Dip into the beaten egg and roll in bread crumbs
5. Place on a greaseproof paper lined baking tray (Silicone baking mats work well too)
6. Repeat for the other 7 eggs
8. Cook for 20-25mins until the cumnbs are turning golden brown.

Enjoy with some good english mustard!

Sounds a bit like deep fried ones but without the fryer Laughing Laughing

Course if you oven bake them you're never going to feel the dispair of after all your hard work making them, watching the eggs part company with the sausage meat when they are frying Laughing Laughing
