has anyone got a recipe for carrot cake ,i used to make one that was from the recipe from womans own
that was about 10 years ago,and i've lost it
i know it had soft brown sugar and grated carrot
and the topping was orange icing it was lovely Very Happy

I haven't gotonefor a cakebut I do have a Muffin recipe that is very nice if you would like that one let me know very easy and yummy

yes please ,
i'm looking for the cake as well i made it for i'm sorry to say my
stepmothers funeral ,her family were from malaysia,they loved the recipe so i gave it to them ,so i'm looking for it again
(sorry watching a programme on farming year in scotland at the same time)

10oz plain flour
1tsp baking powder
1tsp bicarbonate of soda
pinch of salt
2 tsp ground cinnamon
1 egg
2-3 fluid oz milk or water
2tbls honey
4-5oz of granulated or light brown soft sugar
12oz finely grated carrot
1tsp vanilla essence
3fluid oz vegetable oil or 3 oz melted butter
2-3 ozs chopped walnuts or raisins optional
Icing
2oz cream cheese
4oz icing sugar
few drops of vanilla

preheat oven 190-200 c
sift together flour(bran if using)baking powder bicarb salt and cinnamon
in a seperate bowl or jug beaten egg, milk or water, oil or butter,honey, sugar carrot and vanilla mix well
mix with a spoon until JUST combined adding raisins and walnuts at the end do not over mix !
spoon into muffin tins with or without paper cases and bake for 20-25 mins
ice when cool adding a few drops of milk to icing if
needed
Carrot bran muffins
decrease flour to 8oz and add either 1 oz wheat bran or 2 oz of oat bran
