From my Kenwood food processor cookbook:-
Chunky Chocolate Chip Cookies
200g plain chocolate
125g unsalted butter
150g plain flour
1/2 teaspoon baking powder
75g porridge oats
1 egg
125g light muscovado sugar
1. Preheat oven to gas 4/180c/350f. Line 2 baking sheets with baking parchment.
2. Put chocolate in processor bowl and pulse until you have quite large chunks. Tip onto a plate and reserve. Place the butter, flour, baking powder and porridge oats in the processor bowl and process for 30 seconds or until mixture resembles fine breadcrumbs.
3. Add the egg and sugar to the bowl and pulse until well combined. Lastly add the chocolate and pulse again until just combined. Be careful not to over process.
4. Using a spoon put piles of the mixture onto the baking sheets keeping them well apart to allow for spreading. Flatten each pile slightly with the back of a fork.
5. Bake for 15-20 minutes or until they are pale golden. Leave to cool for 2 minutes before lifting the cookies onto a cooling rack. Serve dusted with icing sugar. |
