55g / 2oz Walnuts
115ml/4floz sunflower oil
55g/2oz caster sugar
25g/1oz currants
1 egg
175g/6oz plain flour
1 teaspoon baking powder
1/4 teaspoon of vanilla extract
icing sugar

Preheat Oven to 180ºC/ 350ºF. Grease 2 baking sheets. (In a food processor) finely chop walnuts. In a bowl mix chopped walnuts, sunflower oil, sugar , currants & egg.

Sift in flour and baking powder. Add vanilla. Stir together to form a firm paste, adding more flour if necessary. Roll mixture into small walnut size balls and place on prepared bakingsheets. Bake in the oven for 10 mminutes or until crisp and golden. transfer to wire racks to cool - dust with icing sugar as they cool . Enjoy
