I was wondering what other members views were about using their eggs raw eg. in home made mayo etc.  |

My view is.... YUMMY!!! Pot of homemade mayo in the fridge, chocolate mousse (uncooked ie using raw eggs) planned for the weekend.
Just wondering why you were asking? Do you have concerns about using raw eggs then? |

Well yes lisa ,what with everything you hear re: salmonella, not giving raw egg to young children etc.
I generally make most things that my family eat but have never ventured onto raw egg products. The only way it seems to have, chemical free, olive oil mayo seems to be to make it myself.
My boys love choc mousse but the list of rubbish in the bought ones stops me buying them. The closest I've got is custard based ice-creams which we all love.
Maybe I'm a bit paranoid  |

I figure that using my own eggs I know where they have come from and how the hens have been kept and that they are all healthy
would much rather eat my own stuff than shop bought  |

I am always looking for recipes to get more protein into my veggie boys.
Is there any chance I could have your recipe for chocolate mouse Lisa and your lemon curd recipe Debs?

Chocolate mousse recipe is in the recipe section.
The original one had coffee and rum in it, but I've also made it with just orange instead... |

I wouldnt worry too much what you are told on the TV.So long as you use fresh ingredients and good hygene and store the product correctly there is no reason for not having a go at any thing you fancy.I would be far more concerned about the rubbish for sale in the supermarkets in pretty boxes or served up in restuarants and takeaways than anything made at home.
The majority of food related incidents arise from incorrect storage at the wrong temperatures or cross contamination between cooked and uncooked products.Not what the ingredients consist of.At least when you do it yourself there are no added flavours, preservatives, colours,etc and if you store correctly and eat them more quickly than you would the shop rubbish there is nothing to be concerned about.
When we make nice stuff it rarely has time to get stored for long anyway
