| can somebody give me a recipe for gooseberry's?our gooseberry bush produced loads this year so picked them but now don't know what to use them for any ideas? |

Gooseberry sponge pudding:-
place goosegogs in ovenproof dish, add sugar(enough to lightly cover fruit) then pour over a victoria sponge cake mixture and bake 190 deg till sponge is cooked, serve warm with custard or cold with cream. |

They freeze beautifully for use all through the year, top, tail & wash, pat dry, bag & freeze, they don't stick together so you can get out as many or few as you want.
Failing that Gooseberry & Elderflower Jam
6lbs ripe gooseberries
2 pints water
5 - 6lbs granulated sugar
3 - 4 elderflower heads per lb of gooseberries, or 1 tablespoon of dried per lb
Top, tail & wash gooseberries put into pan with water & cook for about half an hour, cool & add sugar, stir while heating till sugar is dissolved, add elderflowers in a muslin bag & boil rapidly till setting point is reached,
remove the muslin bag & pot.
You don't have to put the elderflowers in but it does make a lovely muscat flavoured jam, dried elderflowers are available from wine making suppliers & possibly spice shops. I usually use dried cos I forget to save any fresh and I don't bother with the muslin bag. Also I myself would only use 5lbs sugar as I prefer a sharper jam, the original recipe is 6lbs
