Starting the Plant:-
2 tablespoons of ground ginger
2 tablespoons sugar
a cup of water

Mix together in a jam jar and cover till it starts to work - up to 3 weeks

Making the Brew:-
Dissolve 3.5 cups of sugar (1lb 4oz approx) in 4 cups of boiling water, add 20 cups of cold water (about 6.5 pints) and the strained juice of 2 lemons, add strained off liquid from "plant" Bottle & allow to stand for 2 hours before capping - use only screw tops, leave for 2 weeks & don't fill the bottles too full.

Keeping the Plant Going

Halve the remaining mixture and add 2 tablespoons ground ginger and 2 tablespoons of sugar and 2 cups of water.
* Feed the plant with 1 tablespoon of ginger and 1 tablespoon sugar each day for 7 days & then it's ready to go all over again. Give the other half of the plant away

* I used to make this but only occasionally and only the first starting the plant bit as it makes such an awful lot, but it was very good, the second lot of instructions I could never fathom as it uses a huge amount of ginger to keep the plant going, when perfectly good ginger beer could be made from 2 tablespoons so if you keep it going - don't bother to feed it for a week, just let it get on with it.Wink
