I made some Lincolnshire Sausages and some bacon from some surplus pork a friend had. I went on www.sausagemaking.org and got all the details, equipment, recipies etc. Bacon is sooooo easy if you've the inclination - you need a loin or belly of pork (boned), some of the ready mixed bacon cure - 30gms per kg, rub it in, wrap in cling film & into a plastic bag, into the fridge, leave a day per 1/2 inch thickness, + 2 days (so about 6 days for belly/streaky) turning every other day, wash off, hang to dry for a day, slice, eat - you'll never buy that wet shop stuff again.

There is a recipe for it in one of Hugh FW's cook books too. I meant to try it ages ago but I haven't got round to it yet. Time to make time... |

probably - also in the River Cottage cookbook p154 ( 139 - 169 is all things pig related) HTH
Has "Meat" got anything extra in it (than is in the River cottage cookbook ? ) I Love HFW !! ever since I saw him in cook on the wild side / TV dinners ( Placenta pâté anyone?!) |

| I wouldn't think it is any worse than Liver - if you can eat that - then why not placenta - they both do the same job ( I think) |

I originally noticed it in the River Cottage Family Cookbook... Hey, I thought, if kids can do it, it should be easy enough for me And (sound of foot steps running upstairs to check...) he also covers it in Meat too! |

I think the placenta he ate was his wifes after the birth of their baby.
I'll try most thing but dont think I could have eaten that
But I do think hes great  |

No, it was worse than that ! He cooked it for a couple who served it to their unwitting friends @ their baby's naming ceremony !!!!
the friends said it was very nice - until they found out what it was
His nickname is Hugh Fearlessly Eatitall though - so he may have eaten his wife's too ! |
