prep 20 mins cooking 20 mins serves 4
2 teaspoons Olive Oil
2 Garlic Cloves sliced
2 Onions sliced
1 Aubergine chopped
625g Sweet Potato chopped
1 teaspoon Ground Cumin
1 teaspoon Ground Coriander
1/2 teaspoon Turmeric
600ml Vegetable stock
200g green beans
400g Can of Chick Peas drained
4 tomatoes chopped
350g Couscous
2 tablespoons of chopped Mixed herbs
grated rind of lemoin and juice of 1 lemon
1. heat the oil in a largish saucepan (it says medium in book, believe me large is better). Add garlic and onion and fry for 2-3 mins until beginning to soften. Add the aubergine and sweet potatoes and fry for 3-4 minutes, then add the spices and cook for a further minute.
2. Pour the stock into the pan and bring to the boil. reduce heat and simmer for 10 mins. Add the beans, chickpeas and tomatoes and simmer for a further 5 minutes.
3. Meanwhile, prepare couscous as per packet instructions (there were none on mine ) Mix the herbs into the couscous with the lemon zest and juice. Serve and enjoy.

Oh I wish. The water buffalo came from a farmers market, they are raised about 30 miles north of here near my parents. I'd love Ostrich and water buffalo and alpaca and soay sheep and celtic cattle and goats and kune kune pigs and tamworth pigs and geese and turkeys and a wolfhound and a saluki and a lakeland terrier and a norweigan forest cat.. but this is for when I get a smallholding..

I ate water buffalo many years ago when on holiday in East Africa, but for the life of me I cannot remember what it tasted like!  |
