Lemon Curd Ice Cream

This is a 1 litre mix. Approximately half for most ice cream machines. Or make two batches and save one for later...

3 lemons
625ml of whipping/heavy cream
or...
470ml of double cream + 160ml of milk
5 egg yolks
200g vanilla sugar

Zest one of the lemons and put in a saucepan with the cream/cream+milk mix and heat gently till just below boiling point then cover and leave for 30 minutes.

Beat together the egg yolks and and sugar till they go paler and lighter. Reheat the lemon and cream till just below boiling point then pour slowly into the eggs whilst constantly beating so they don't curdle.

Place the bowl over a pan of simmering water or if you're really brave heat gently in the pan on a well controlled ring. Stir the custard until it coats the back of a spoon, then plunge the bowl into a bowl of cold water to stop the cooking.

Zest the other two lemons and add to the custard. Leave aside to cool to room temperature. Then put in the fridge to chill.

Squeeze the juice from all the lemons and add to the chilled custard a small amount at a time. Once you've added about 6 Tbsp check the taste and add more if you want.

Churn in your ice cream maker.

Even better would be "Sausage Roll Ice cream" !!!!

Nanny,

The trick is to avoid all wheat products and potatoes, so no bread etc, and you will lose weight,

BTW, if you want to snack eat raw celery, it takes more energy to digest it than the body actually gets from it, so you can lose weight while eating!

George, I am nearly 50 and have been overweight since i was 9. I know how to, just don't manage to and now don't worry so much. I am eating healthily currently, and Lemon Curd and Ice Cream and Sausages don't fit in that category. AND, I have only ever been a Size 10 and I was about 7 or 8 then I suspect, so my comments are tongue in cheek and there isn't a suitable smiley to express that. Thanks. Wink

Oh I tried the Atkins Diet...i lasted 4 days & I went loopy dreaming about bread & Pasta ! Shocked Shocked

LOL nanny,

that was the joy after I had cancer, I could eat whatever I liked to try and put some weight back on,

Then they had the blooming check to complain that my colesterol level was far too high Embarassed

Well, you see the Ice Cream I make will be far superior to the crap you can buy, so in my book that'll be healthy Wink No additivies, and the important thing for me now is that I know what has gone into my food. That's my scuse and I'm sticking to it Wink
