Picked up my 3 lambs from the slaughterhouse yesterday and when i asked if they could tell me what grade they were (first time for me so know nothing) I was told that they had labels on the legs which would tell me the grade. He also said that judging by what he could see that they were all very good. Anyway, got home and started to freeze and got all 3 labels but can't make sense of them ( ). I can read the weight and the slaughterhouse number but don't know what represents the grade or how the grading works, ie what is good and what is bad. I've tried googleing but don't seem to be getting anywhere.

there should be a number (say 3) then a letter (E,U or L etc) followed by another letter. Have a look on the Meat and Livestock commissions website, they should tell you about grading. Its so long since I bothered (BFL dont fatten well so mine would be rubbish ) that I have forgotten what is good. I think its something like 3 U R, or maybe its U 3 R try putting in "carcase grading" in google and see what comes up (I havent as yet so maybe nothing will
