I have phoned a couple places and they are not interested or say that they are to bizzy. Butcher in Shots, Abattoir in St Andrews no joy. Looking for somewhere in central Scotland. I've passed it coming from Saughton onto the Approach Rd (will be on your right fairly near to Tynecastle) heading toward Lothian Road. Looking for contact details for you for any Scottish abbatoir nearby.
